Healthy Chinese Style Ginger Chicken


This is simple Chinese style ginger chicken. Onions and bell peppers are cooked with fresh ginger and Chinese seasoning.  This dish is really healthy and is made with very little oil.

Items you'll need
2 Onions
1 Jalapeno
½ Red Bell Pepper
½ Yellow Bell Pepper
2 Inches Fresh Ginger
3 Chicken Breasts
1 Tbsp. Sesame Oil
1Tsp Rice Vinegar
1 Tsp Fish Sauce
1 Tbsp. Hoisin Sauce
2 Tbsp. Honey
Salt to taste
STEPS
1)      Chop all the vegetables, ginger, and the chicken.






2)      Heat oil, fry half of the ginger for a minute.
3)      Add onions, jalapeƱos, salt to taste, and cook for 2 minutes.


4)      Add bell peppers and cook for 5 minutes.


5)      Add vinegar, fish sauce, and hoisin sauce.
6)      Add chicken, the rest of the ginger, honey and cook for 30 minutes.

Healthy Palak/Saag (Spinach) Paneer

Palak Paneek is a delicious recipe made using Palak(spinach) and Paneer( cubed cottage cheese). Onions, cumin and other spices are sauteed in oil. Tomatoes are reduced to pulp, spinach is cooked and then blended. The Paneer is the fried and added to the blended spinach. Healthy and delicious!!!

Items you'll need
1 Onion
2 Tomatoes
2 Green Chilies
1 Tbsp. Cumin Seed
WHOLE GARAM MASALA
*1 Inch Cinnamon Stick
*2 Green Cardamom Pods
*1 Dry Red Chili
*2 Cloves
*1 Small Piece Star Anise
2 Tbsp. Ginger Garlic Paste
2 Tsp Turmeric Powder
1 Tsp Cumin Powder
1 Tsp Garam Masala Powder
1 Tsp Red Chili Powder
Salt to Taste
1 Tbsp. Oil
STEPS
1)      Chop all the vegetables.


2)      Heat oil, add cumin, and let it splutter.




3)      Add the whole garam masala (starred spices) and green chilies.
4)      Add onions and cook for 20 minutes.


5)      Add Ginger garlic paste, turmeric, cumin powder, garam masala powder, red chili powder, and water. Add tomatoes and cook for 10 minutes.

6)      Add spinach and cook for 10 minutes.
7)      Add salt to taste and blend till smooth.



8)      Fry the paneer till brown.
9)      Add paneer to blended spinach. Enjoy!

Healthy Chicken Steamed Buns

These buns are served at dim sum restaurants. This is my take on a chinese dish. I have made it easy to cook. The spices and seasonings used can be found in any supermarket. It's healthy and delicious. Chicken is ground, then stuffed into dough, and steamed. This is best enjoyed with chili sauce or chili oil.

Items you'll need
For dough
400 gms All Purpose Flour
1 Soy Sauce
2 Tsp Baking Powder
2 Tbsp. Brown Sugar
2 Tsp Dry Yeast
240 ml Water
For stuffing
1 Ground Chicken Breast
1 Tsp Rice Vinegar
1 Tsp Fish Sauce
1 Tbsp. Oyster Sauce
1 Tsp Sesame Oil
1 Tsp Soy Sauce
2 Tsp Ginger Garlic Paste
Salt to taste

STEPS
1)      Add soy sauce, baking powder, and salt to flour.



2)      Put brown sugar, yeast in cup and add 240 ml luke warm water. Let it rest for 10 minutes.


3)      Knead the flour and yeast mixture. Let it rise for 90 minutes.


4)      Mix the chicken with rice vinegar, fish sauce, oyster sauce, sesame oil, soy sauce, ginger garlic paste, and salt.


5)      Divide dough and chicken into 16 parts.
6)      Roll the dough balls about 5 inches in diameter, stuff with chicken and seal the tops.


7)      Spray steamer with oil and boil water.


8)      Steam buns for about 16-17 minutes.

Healthy Pav Bhaji

Pav bhaji is an Indian dish made with vegaebables and spices. Vegetables are boiled with salt. Onions and tomatoes are then cooked with spices. The boiled vegetables are added to the cooked onions and then mashed up. This can be enjoyed with toasted buns, fresh onions and lemon juice.

Items you'll need
1 Lb Peas
1 Lb Potatoes
1 Lb Cauliflower
2 Onions
3 Tomatoes
2 Green Chilies
1Tbsp. Oil
1 Tbsp. Cumin Seed
3 Tbsp. Ginger Garlic Paste
1 Tsp Turmeric
1 Tsp Red Chili Powder
2 Tbsp. Pav Bhaji Masala (recipe at the end)
Salt to taste


STEPS
1)      Boil the Peas, Potatoes, and Cauliflower for about 25 minutes or pressure cook them for 15 minutes


2)      Chop the Onions, Tomatoes, and Green Chilies.


3)      Heat Oil, add Cumin and Green Chilies. Cook for 1 minute on medium flame.


4)      Add Onions, Salt, and cook for 30 minutes.






5)      Add Ginger Garlic, Turmeric, Pav Bhaji Masala, 1 Cup Water, Tomatoes, and Red Chili Powder. Cook for 20 minutes.




6)      Add boiled Vegetables, mash well and cook for 5 minutes.




GARNISH WITH FRESHLY CHOPPED ONIONS, LEMON JUICE, AND ENJOY WITH SOME TOASTED BUNS.



PAV BHAJI MASALA
Make in bulk or buy from Indian store (good brands are M.D.H, Shan, Everest)
·         1 ½ inch Cinnamon
·         3 Tbsp. Coriander seeds
·         1 Tbsp. Fennel Seed
·         4 Dry Red Chilies
·         2 Tbsp. Cumin seeds
·         2 Black Cardamoms
·         5 Cloves
·         1 Tbsp. Dry Mango Powder
1)      Roast all the spices except the mango powder for 5 minutes on medium-high flame.
2)      Grind in food processor and it cool
3)      Add the mango powder

Indian Rice Pulao/Pilaf

Pulao is a an Indian dish made with rice and spices. It can be enjoyed with chicken curry or a lot of other Indian dishes.

Items you'll need
2 Cups Rice
1 Tbsp. Oil/Ghee
1 Tsp Cumin Seed
*2 Dry Red Chillies
*2 Green Cardamom Pods
*2-3 Cloves
*1 Bay Leaf
*1 Inch Cinnamon
*1 Small Star Anise 
Starred Items are also known as Khada (whole) Garam Masala
1 Lb. Peas and Carrots mix
1 Cup Milk
1 Pinch Dry Saffron
3 Cups Water
1 Tsp. Cumin Powder
1 Tsp. Powdered Garam Masala
Salt to Taste

STEPS

1)      Heat Oil and Cumin Seed. Let it crackle.

2)      Add Khada Garam Masala and stir for about 30 seconds on medium flame.

3)      Add peas and carrots.

4)      Add the Rice. Stir till toasted or for about 2 minutes.

5)      Add Salt to taste.
6)      Add a pinch of Dry Saffron to Milk and set aside.

7)      Add Cumin Powder and Powdered Garam Masala to the Rice.

8)      Add the Saffron Milk and Water to the Rice.

9)      Cook according to package instructions.

Portobello (mushroom) Burger

Portobello mushrooms are healthy and delicious. I have made a healthy and tasty meal using portobello mushrooms cooked in balsamic vinegar, honey, and spices. They are then served with a cheese slice, buns, and baked vegetables.

Items you’ll need
4 Portobello Mushrooms
3 Slices American Cheese
1 Tomato
3 Tsbp Light Mayonnaise
4 Leaves of Lettuce
1 Onion
8 Tbsp Honey Balsamic Vinegar
2 Tsp Garlic Powder
2 Tsp Onion Powder
2 Tsp Pepper
1 Tsp Parsley
1 Tsp Paprika
2 Tbsp Honey
½ Lb Broccoli
½ Lb Brussel Sprouts
½ Lb Green Beans
3 Medium Sized Red Potatoes
Salt to taste


Baking the vegetables
Line a baking tray with aluminum foil and spray some oil. Put all the vegetables on the baking tray. Add 1 tsp each of garlic powder, onion powder, pepper, and parsley. Add salt to taste and some spray oil.  Bake in preheated oven set to 350F for about 25 minutes, give the vegetables a stir and bake for another 20 minutes.




Cleaning the mushrooms
Slice the broken parts of the mushrooms, chop the stem off, and scrape the gills using a spoon.

Cooking the mushrooms
Put the mushrooms on a pan. Chop the onions and put in the pan with the mushrooms. Add 4 Tbsp balsamic vinegar to the pan. Add 1 tsp each of garlic powder, onion powder, pepper, and paprika. Add the rest of balsamic vinegar. Add salt to taste.


Cook for 10 minutes on medium heat with lid on, flip the mushrooms and cook for another 10 minutes with the lid on. 


Put a slice of cheese on each of the mushrooms, turn the heat off, and put the lid on for 2-3 minutes till the cheese melts. Place the cooked mushrooms on a plate.


 Reduce the remaining sauce for about 5 minutes on medium heat and put on the mushrooms.



Make the burgers and enjoy!




Chicken Tikka Wrap/Roll

Chicken Tikka is dish made with chicken marinated in yoghurt, ginger garlic, and spices. It's then baked with onion, tomatoes, and bell peppers. This chicken can then wrapped in a tasty wheat bread with lemon juice and is enjoyed with tamarind chutney.




Items you'll need
2 lbs Lean Chicken Breast
2 Tsp Garam Masala (or curry powder from the supermarket)
 1 Tsp Paprika
 4 Tbsp Yoghurt
3 Tbsp Lemon Juice
2 Tbsp Ginger-Garlic Paste
1/8 Tsp Red Food Color
1 Red Onion
1 Tomato
1 Bell Pepper
4 Skewers
3 Cups Flour
1/8 Cup Oil
10 fl oz Water
1 Tsp Nigella seeds (optional)
Salt

Marinate the chicken
Slice chicken into thin strips. Add ginger-garlic paste, garam masala, paprika, yoghurt, 2 Tbsp lemon juice, food coloring, and a little salt. Let it marinate for 8 hours.





Vegetables
Chop the vegetables.
Baking the chicken
Take a skewer and slide a piece of onion, tomato, bell pepper, marinated chicken; repeat till the skewer is full. Preheat oven to 450F. Bake at 450F for 15 minutes, turn and bake for another 15 minutes.





Dough
Take flour; add oil, water, and nigella seeds. Knead for about 10 minutes till the dough is smooth. Roll the dough into a circle about 7 inches in diameter, spray some oil and roll the dough into a long cylinder. Grab one end and coil the dough so it looks like snail. Flatten and use a rolling pin to roll the dough to a circle approximately 10 inches in diameter.




Making the parathas
Put the rolled dough on a pan on medium to high heat. Spray some oil. Cook both sides till done.



Making the wrap

Lay the paratha on a plate and empty half of one skewer on it. Squeeze some lemon juice. Roll it up and enjoy!
