Kadai Chicken

Kadai chicken is a dish made using ghee (clarified butter), onions, tomatoes, bell peppers, spices, and chicken. The ghee adds a lot of favor to the dish but one can also use regular oil instead of ghee. Freshly chopped onions and bell peppers are also added at the end to give it a little extra flavor. Kadai stands for wok in Hindi; this dish is traditionally made in a cast iron wok.

Empanadas

This recipe was given to me by a colleague at work who is Argentinian. Empanadas are stuffed bread pastries either fried or baked. I have used turkey, eggs, potatoes, and spices for the filling. To make it easier to make I have used Egg Roll Wrappers or Dumpling Wrappers instead of making the pastry dough. This significantly reduces the preparation time. I have served this with a homemade chipotle yoghurt dip.

It's healthy and delicious. Chicken is ground, then stuffed into dough, and steamed. This is best enjoyed with chili sauce or chili oil.
